"Fixed Up" Chocolate Cake

For a treat I decided to make us a chocolate cake - a traditional chocolate cake with white frosting layers.  Since I had a chocolate cake mix on hand, I decided to just fix it up a little.  I ended up putting a bit of this and a dash of that in, and the results were one of the best chocolate cakes we've ever had!  Deliciously chocolaty and moist, with lighter-than-air vanilla frosting.

"Fixed Up" Chocolate Cake

  • 1 box chocolate cake mix
  • 1 can almond paste, grated
  • 1/2 package instant white chocolate pudding mix
  • 1/2 package instant cheesecake pudding mix
  • 1/2 cup sour cream
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 cup water

Frosting

  • 1 container vanilla frosting
  • 1 8-ounce container cool whip

Thoroughly mix all ingredients together, and beat on medium speed for about 2 minutes.  Place in desired greased cake pan or pans (I used two 6-inch pans).  Bake at 350 for about 35 - 40 minutes, or until cake tests done with toothpick. 

Remove from pans and let cool.  When cool, slice each cake in half (I put it in the freezer for a little while before to help with this).  To make the frosting, simply fold the container of frosting and the cool whip together.  Frost in between each layer, then frost the whole cake.  We liked this cake best at room temperature.
