Mexican Dip
In the bottom of a 9x13 pan, layer in order:
- One 16-ounce can refried beans, lightly salted
- Two mashed avocados mixed with 1 cup sour cream (use light or fat free if desired!)
- Sprinkle with 1/2 to 1 chopped onion (depending on taste)
- Sprinkle with 1 chopped tomato (optional)
- Spread with 1 to 1 1/2 cups thick and chunky salsa
- Top with 2 cups cheddar cheese
